During the Warring States Period (战国时期), many states made changes to become stronger. One of the most changes was created by Shang Yang in Qin. Shang Yang worked out a set of plans. At first, these plans were not  accepted because people didn't believe in him.

To solve this problem, Shang Yang came up with an . He ordered his men to put a thin wooden pole (杆) at the south gate. Then he said anyone who took the pole to the north gate would  ten gold pieces. The task was easy that nobody believed it was true. They all thought Shang Yang was joking. After seeing that, Shang Yang said he would offer fifty gold pieces to anyone who did it.

Taiyuan, the capital of Shanxi Province, is known for its aged vinegar (陈醋). This vinegar has been made for more than 3,000 years. In 2006, the traditional way of making it became a national cultural heritage (遗产). Do you know how to make it?

First, workers choose high-quality sorghum (高粱) and break it into small pieces. Then they mix it with water and steam it for one and a half to two hours. After that, they add a special ingredient called daqu. Next, workers smoke the mixture in a special oven. The most important thing here is to watch the temperature and time carefully. The high heat turns it darker, until it becomes a very dark purple. This step gives the vinegar its special color and taste. If the temperature or time is wrong, the vinegar won't taste good.

Then, workers take out the vinegar and age it. The new vinegar is put into big jars (坛子) and left outside in the sun for several months. This helps get water out of the vinegar and concentrates its special taste.

Today, people still make vinegar in this old way. Shanxi aged vinegar is now sold in many countries. People around the world enjoy its special taste.
