Beejhy Barhany grew up in an Ethiopian-Jewish family in Israel. She has loved cooking since she was very young. Now, she runs Tsion Cafe in New York and still follows many cooking traditions. One of these is washing raw meat before cooking. For Barhany, putting raw chicken in salt and lemon water is both useful and part of her culture.
In fact, a 2015 study showed that nearly 70% of Americans wash their chicken before cooking. However, since the 1990s, experts from the U.S. Department of Agriculture (USDA) have advised people not to do this. They state that rather than reducing the risk of foodborne illness, washing raw meat makes it more likely to spread bacteria (细菌) around the kitchen, which may make people sick.
"Washing meat before cooking isn't really helpful," says Betty Feng, a food science professor at Purdue University. "The only thing it does is splashing (飞溅) water and can spread bacteria to other places in your kitchen—like your sink and your clothes." Moreover, Feng strongly disagrees with using saltwater, vinegar, or lemon juice, because they are not strong enough to kill bacteria. "If the acidity (酸度) is high enough to kill bacteria, you wouldn't be able to touch it with your hands," she explains.
A recent study also found that placing meat in a bowl of water reduced the splashing but not the spread of bacteria. "I would treat the sink just like the outside of the chicken—it could also be dirty and unsafe," says Benjamin Chapman, an associate professor in North Carolina State University. "The way that we make meat safe is through cooking, not through washing away bacteria."
