Hot pot is one of the most popular meals in China. Hot pot first appeared in China about 2,000 years ago. People used to eat it only in winter, but now it is eaten all year round.

Besides (除……之外) its delicious taste, there are two other reasons why Chinese people like hot pot. First, eating hot pot is a great way to make new friends. People sit around the pot, talking, eating, drinking, and having fun. This makes people feel comfortable and relaxed. Second, hot pot is a "healthy meal". It can warm the body and help blood flow (血液流动) in winter.

There are many kinds of hot pot in China. Two popular kinds are Sichuan hot pot and Beijing mutton hot pot. Sichuan hot pot is numbing and spicy (又麻又辣的) while Beijing mutton hot pot mainly uses mutton and lamb bones (骨头).

When you eat hot pot in a restaurant, there are usually two kinds of soup bases(汤底): clear and spicy. A clear soup base has a mild (清淡的) taste and is made from seafood or meat bones. A spicy soup base uses Sichuan pepper, so it is spicy and salty. If you have a group with different tastes, you can choose the double-flavour hot pot (鸳鸯锅). It has a clear soup base on one side, a spicy soup base on the other, and a divider in the middle.

My best holiday experience was two years ago. My family lives in Wuhan, the city in Central China. That summer, I decided something cool: cycling from Wuhan to Beijing with some friends from college.

My parents were at my idea, but soon they gave me all their support. their help, I made a cycling plan. I also learnt a lot from other people's cycling experiences.
